St. Patty's Day Spuds Mash Colcannon Recipe

Our good friend Danita Arthur has been cooking up a storm for over 20 years. She's developed many recipes as a chef and cooking instructor. Many of Dani's "cleaner eating" recipes are Gluten Free, Dairy Free, or Paleo. She also has plenty of traditional gourmet classic recipes including main entrees, side dishes, and even deserts and smoothies. Dani really knows how to make use of healthy greens, so we think of her as a cooking queen!

One of our favorite recipes of Dani's is for "Spuds Mash" Colcannon Potatoes. This is a traditional Irish meal often associated with St. Patrick's Day. But it's also delicious and great to eat any time of the year. This is not just a standard mashed potatoes recipe. Made with potatoes, cabbage, kale, and onion, this dish is full of flavor with less fat and calories. Colcannon makes a tasty side dish to most chicken and meat entrees, or it can be eaten all by itself.
